Carrot & root veg week on #EatThemToDefeatThem might be coming to an end, but they are some of my very favourite veg to eat anytime, and are very kid-friendly, too. They are naturally sweet, versatile enough to turn into just about anything, and perfect for making “fun” healthy kid food.

Like these burgers. They take little time to make, are made from easy to find, affordable ingredients, can be frozen and thawed/reheated after cooking if you like, and can be changed up to adapt to different tastes by laying out bowls and plates of different burger add-ins to suit everyone’s tastes as a kind of “build your own burger bar“.

We love: avocado slices, tomato slices, pickled jalapenos, leafy lettuce or kale crisps, crispy bacon, grilled halloumi, fried mushrooms, roasted bell peppers, peach BBQ sauce, sugar free ketchup, mayonnaise, pesto, hummus… obviously not all at once! Choose 3 or 4 add-ins you know your family will enjoy, and maybe 1 or 2 you think they might give a go, and lay it all out for them to choose. Kids who have chosen what to add to their dinner are more likely to eat it!

Either way, you have a delicious mid-week budget-friendly dinner that’s ready in no time and so easy that the kids can make it (grate the veg for them beforehand and get them to measure out and chuck everything in the blender and turn it on, then shape them for you to fry).

Yummy beetroot & carrot burgers that are dairy free, gluten free with a vegan option, packed with fresh, healthy ingredients and made in minutes. Perfect for a quick, healthy, veg-packed family dinner.

Servings: 8 burgers
Ingredients
  • 1 raw beetroot (about 200-250g), grated
  • 2 medium carrots (about 200g), grated
  • 400 g (14 oz) tin chickpeas (garbanzo beans), drained
  • 1 tablespoon  tahini
  • 2 teaspoons  Dijon mustard
  • egg (use a flax egg for vegan*)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 100 g (1 cup) breadcrumbs or porridge oats
  • sea salt and freshly ground black pepper, to season
  • olive oil, for frying
  • to serve: burger buns of choice
  • spread to serve: your choice of tzatziki, hummus, pesto or mayonnaise
  • greens to serve: salad leaves, micro greens or sprouts
  • extras to serve: sliced avocado, sliced tomato, sliced or grated hard cheese or mozzarella, sliced pickled jalapenos
Instructions
  1. Mix burger ingredients in a food processor to form a smooth, thick paste. Form into patties and fry in a pan set over medium heat until cooked through and golden (about 3-4 mins on each side). Serve with your choice of bun, fillings and extras.
Recipe Notes

*for the flax egg, mix 1 tablespoon ground flaxseed (linseed) with 3 tablespoons hot water and leave to "gel" for 5 minutes
