You know those nights where you’re staring into the fridge on autopilot and you know full well that dinner has to be ready in half an hour but you just don’t.have.the.energy.

Yeah, that’s pretty much every day for me at the moment.

But I struggle with chronic fatigue, and I have phases where I know I need to have an array of recipes I can pull together with minimal effort in little time to make sure we still have delicious healthy food on the table even when the takeaway menus are calling my name.

This is number one on that list.

It is my favourite go-to dinner for those nights when I just can’t. My kids love sausages, I can substitute the vegetables for any I have on hand that will cook in 20-30 mins, and it leaves so little in the way of washing up.

So keep a pack of good-quality sausages and a bag of frozen green beans in your freezer, and next time you find yourself with zero energy and desperate for something easy and yummy, hit “Defrost”, pour onto a tray and put your feet up for half an hour while dinner cooks itself for you!

A one-sheet speedy supper that is sweet and delicious and super easy, for those nights when you just need something simple.

Course: Autumn, Bonfire Night, Dinner, Entertaining, Fall, Main Course, Spring, Summer, Winter
Servings: 4 servings

Ingredients
  • 8 good-quality (free range) sausages (gluten free if needed)
  • 4 large handfuls frozen green beans
  • 1 large squash, cubed (frozen cubed is fine)
  • 1 tbsp fennel seeds
  • olive oil
  • salt & pepper
  • green salad, crusty bread, and/or mustard, to serve
Instructions
  1. Preheat the oven to 200C/400F/gas 6. Place the sausages, green beans and squash cubes on a baking tray or roasting dish. Sprinkle over the fennel seeds and drizzle everything generously with olive oil. Toss slightly to coat, season with salt & pepper and roast for 20-30 mins, until everything is soft, golden and cooked through. Serve on its own or with some crusty bread, a green salad and some mustard to dip the sausages in.
