I’ve been meaning to work out a truly yummy low sugar flapjack recipe for ages now. I love flapjacks (and to US/Canadian readers, I mean the sweet oat and syrup snacks, not the pancakes!). My dad’s always loved them, and I loved sneaking bites off him as a child.

The combination of oats, butter and syrup has always been heavenly and comforting, but I wondered if I could lower the sugar, and possibly even sneak in a little veg, and still have it taste amazing.

The answer, my friends, is yes. Definitely yes.

Because these beauties are still sweet, buttery and chewy but crumbly in just the right ways. The sugar is minimal and natural, and there is even some carrot in there. Carrot cake meets flapjack in this yummy oaty snack.

Delicious, buttery, chewy and crumbly flapjacks that are low in sugar (all natural) and even contain some veg! An easy healthy snack.

Course: Autumn, Bonfire Night, Breakfast, Dessert, Easter, Fall, Gluten Free, Halloween, Holiday, Snack, Snacks, Spring, Summer, Treat, Vegetarian, Winter
Servings: 12 flapjacks
Ingredients
  • 125 g (1 stick + 1 tbsp) unsalted butter
  • pinch of sea salt
  • 2 heaped tbsp xylitol (use coconut sugar if you prefer - it brings each flapjack square to about 3g/just over 1/2 tsp of free sugar)
  • 1 heaped tbsp rice syrup
  • 250 g (2 1/2 cups) porridge oats
  • 1 large carrot, grated
  • 1 tsp mixed spice or cinnamon
  • 2 tbsp raisins or unsweetened dried cranberries/blueberries/cherries, optional
Instructions
  1. Preheat oven to 200C/400F/gas 6. Lightly grease and line a 22cm/9in square baking tin. Melt the butter, salt, xylitol and rice syrup in a large saucepan. Stir in the remaining ingredients then press into the prepare tin. Bake for 15-20 mins. Allow to cool completely, then slice into 12 squares.

  1. I loved your sugar free birthday cake recipe and can’t wait to try some more of your recipes! I have the granulated stevia – can I use this instead of xylitol or liquid stevia?

    1. Thanks Sara, glad you enjoyed it. You should be able to use that instead in this recipe as it isn’t much and doesn’t rely on it for texture. Just start with a pinch (about 1/8 tsp) and taste and adjust as needed, as granulated stevia, like liquid stevia, can be super sweet! 🙂
