Creamy Veg-Packed Avocado Dressing
Eating salad has never been so easy. Seriously, this avocado dressing is the creamiest, richest, most flavoursome dressing you can make, and it makes everything better.
Ok, so maybe I won’t be pouring it over peanut butter brownies, but in pastas, salads, wraps, sandwiches, over breakfast eggs, or as a dip for veggies? It doesn’t get much better than this.
This is like the creaminess of mayonnaise meets the flavours of pesto but is vegan and packed with veg.
It’s genuinely a vegetable-filled sauce that makes other vegetables taste even better. It’s just a win-win situation all round. 😉
Kids, for the most part, are pretty big avocado fans. It’s one of the easiest things to feed a weaning baby, and the veg-meets-fruit sweet-creamy-savouriness of it makes it a kid-friendly food always. So get them involved in making a big batch of this and see if they will happily smother veg, salads, and veg-based sandwiches or pastas with it. You may be surprised.
This makes enough for several meals and/or snacks, and can keep in the fridge for up to a week, but if you need it for longer, you can freeze it in ice cube trays and defrost briefly before blitzing together again for later use. It is always better fresh though, so best to make a half batch if you don’t think you’ll get through it all in a week.
A super creamy, quick & easy dressing that is just as good stirred through pasta as it is poured liberally over salads, cooked vegetables, breakfast eggs, or used as a dip for raw veggies. A veg-packed sauce that even makes other vegetables taste appealing. Vegan, paleo, low carb and gluten free.
- 2 ripe avocados
- 1 bunch fresh basil (a couple of handfuls)
- juice of 1/2 a lemon
- 1 Little Gem lettuce or a couple of handfuls of Iceberg lettuce
- 60 ml (1/4 cup) olive oil
- large handful of frozen peas
- salt & pepper, to taste

Scoop out the flesh of the avocados and add to a high-powered blender or food processor with the other ingredients. Blitz until smooth. If it looks too thick to pour, add some water and blitz again to thin out. Taste and add more lemon, seasoning or basil to taste.
