Delicious, buttery, chewy and crumbly flapjacks that are low in sugar (all natural) and even contain some veg! An easy healthy snack.

Servings: 12 flapjacks
Ingredients
  • 125 g (1 stick + 1 tbsp) unsalted butter
  • pinch of sea salt
  • 2 heaped tbsp xylitol (use coconut sugar if you prefer - it brings each flapjack square to about 3g/just over 1/2 tsp of free sugar)
  • 1 heaped tbsp rice syrup
  • 250 g (2 1/2 cups) porridge oats
  • 1 large carrot, grated
  • 1 tsp mixed spice or cinnamon
  • 2 tbsp raisins or unsweetened dried cranberries/blueberries/cherries, optional
Instructions
  1. Preheat oven to 200C/400F/gas 6. Lightly grease and line a 22cm/9in square baking tin. Melt the butter, salt, xylitol and rice syrup in a large saucepan. Stir in the remaining ingredients then press into the prepare tin. Bake for 15-20 mins. Allow to cool completely, then slice into 12 squares.
