A ray of sunshine in a glass, this delicious tropical green smoothie is packed full of goodness, greens and gingery warmth. Perfect for a little pick-me-up on a dreary winter's day. Gluten free, vegan, no added sugar.

Ingredients
  • 1/2 large orange (or 1 small one)
  • 50 g (2 cups) fresh baby spinach
  • 1 small courgette (zucchini), grated
  • 50 g (1 cup) frozen pineapple
  • 4 teaspoons fresh grated ginger + more to taste
  • 250 g (1 cup) yogurt (dairy or coconut)
  • 250 ml (1 cup) or more water, coconut water or unsweetened coconut drinking milk
Instructions
  1. Zest the 1/2 orange into a high-powered blender, then peel and add the peeled orange segments. And all the other ingredients to the blender and blitz until smooth. Add more liquid if it looks too thick. Taste and add more grated ginger to taste (I like a decent kick but others prefer it barely there). Serve cold immediately. Any leftover smoothie can be frozen in ice cube trays for up to 2 months and blitzed in the blender until soft again.
