An almost-instant dessert, this mug cookie has all the taste and texture of a chocolate chip cookie, but has less than 1g sugar (+ a totally sugar free option) and can be made in 1 minute.
Cream coconut oil or butter well with xylitol in a microwave-able mug. Stir in vanilla, flour, salt and bicarbonate of soda and mix until combined. Mix in enough milk to make a soft dough (we are looking for cookie dough, not batter). Mix in the chocolate and microwave on High for about 40 - 50 secs, until risen and cooked. Alternatively, cook in a preheated oven at 180C/350F/gas 4 for 15-20 mins in an ovenproof ramekin if you do not have a microwave.
