A healthier, vegetable-packed nutritious version of shop-bought sausage rolls. These rolls are so easy to make and so much healthier than the shop version that you won't ever want to go back!
Preheat the oven to 180C/350F/gas 4. Mix the sausage meat with the grated vegetables and seasonings.
Shape the meat & veg mixture into a long sausage shape and place in the centre of the puff pastry rectangle. Roll pastry over the meat until sausage meat is covered. Tuck the ends under.
Brush with beaten egg and bake for 35-50 mins, until golden and crisp on the outside and sausage meat is cooked through on the inside.
*you can use lots of vegetables including grated courgette, sweet potato, celeriac, swede or parsnip, or shredded greens
