Bake the potatoes in a preheated oven at 200C/400F/gas 6 for 45 mins - 1 hour, or until soft and fluffy.
Allow to cool until you can stand to handle them, then peel off the skins. Mash, season and serve with a generous helping of butter.*
*garlic butter is particularly nice - simply add 2 cloves minced garlic to your softened butter before adding to the mash
