No Added Sugar Tropical Green Smoothie
I do enjoy winter jumpers, hot chocolates, Christmas and coziness, but sometimes on a dreary winter’s day, I long for a little sunshine, don’t you?
I have been experiencing the highs and lows of settling both my children into a new school and an old preschool without the beloved sibling, and it has been a challenge, I must say. Some tears from us all, the hard moments of watching them walk off on their own and letting them go just a little bit more, and joyfully sharing in their excitement at new friends and experiences, while my heart breaks just a little to see them growing up so fast.
It’s been an emotional rollercoaster, and it’s left me needing a little sunshine-y pick-me-up on the cold, wet, grey days.
Fortunately, I have found the answer. In drink… the soft kind. 😉
This tropical green smoothie is full of exotic flavour, gingery warmth and chock full of green-filled goodness. It can heal on many levels, not just because it is healthy, but because it is also delicious and closing your eyes as you sip on it gives you the tropical glow feeling we all need a little of on yet another winter day.
So if you are in need of a little sunshine today, try making this smoothie. I like to keep the ingredients for it in my freezer semi-permanently now, so I can break out the cold green elixir at a moment’s notice.
A ray of sunshine in a glass, this delicious tropical green smoothie is packed full of goodness, greens and gingery warmth. Perfect for a little pick-me-up on a dreary winter's day. Gluten free, vegan, no added sugar.
- 1/2 large orange (or 1 small one)
- 50 g (2 cups) fresh baby spinach
- 1 small courgette (zucchini), grated
- 50 g (1 cup) frozen pineapple
- 4 teaspoons fresh grated ginger + more to taste
- 250 g (1 cup) yogurt (dairy or coconut)
- 250 ml (1 cup) or more water, coconut water or unsweetened coconut drinking milk
-
Zest the 1/2 orange into a high-powered blender, then peel and add the peeled orange segments. And all the other ingredients to the blender and blitz until smooth. Add more liquid if it looks too thick. Taste and add more grated ginger to taste (I like a decent kick but others prefer it barely there). Serve cold immediately. Any leftover smoothie can be frozen in ice cube trays for up to 2 months and blitzed in the blender until soft again.
