Easy 5-Minute Microwave Applesauce (With Veggies!)
Do you ever have that moment where you go to make a great-looking naturally sweetened recipe and realise halfway through that it calls for unsweetened applesauce that you definitely don’t have in your kitchen?
I’ve had that moment a few times too many, but instead of learning from my mistakes and reading the recipe through in full before making it, I instead ended up coming up with a 5-minute microwave applesauce recipe I could make while putting together the other ingredients!
Plus, it sneaks in some delicious vitamin-A-packed orange veg without anyone knowing, and is just as delicious on its own or stirred through yogurt or porridge. It freezes well in ice cube trays so you can defrost it in seconds and have it ready even quicker for the next recipe. So for just a few minutes (only 2 of which are actual effort), I consider this 5-minute microwave applesauce a winning recipe.
The easiest EVER applesauce, made in the microwave in just 3-5 minutes. Vegan, gluten free, sugar and sweetener free. Oh, and it even contains veg!
- 6 apples, diced (peeled if you like, but not necessary, especially if using organic)
- 1 large sweet potato, peeled and diced
- 60 ml (1/4 cup) water
- juice of 1/2 orange or lemon
- 2 teaspoons ground cinnamon

Mix and microwave on High for 3-4 minutes (I cover it lightly with a microwave-safe cover for the bowl – not pushed on properly, just resting on top), until soft. Blitz until smooth.
Want to add even more veg? Grate a carrot or two into the mix before microwaving!
