I love shortcuts in cooking, don’t you?

When you are trying to eat less sugar and more veg, it feels like maybe shortcuts are out. Like everything has to be made from scratch.

And yes, it definitely helps to make as much as you can yourself.

But that doesn’t mean you can’t take some quick routes, especially if you aren’t on a particularly strict budget. Pre-cut or cooked veg, jars that aren’t packed full of sugar or vegetable oils, packaged items that have only a handful of recognisable ingredients. These things do exist, and they can definitely help make this eating more healthy thing stick when time is short!

Yes, you need to do a little chopping (although you can definitely swap the courgette (zucchini) and red onion for frozen sliced peppers and pre-chopped frozen onions if you prefer). But most of this dish is simply stirring, dumping in a dish and baking.

And it is delicious. Seriously delicious.

I really enjoy using a low sugar salsa that has minimal and recognisable ingredients to boost a simple Mexican breakfast or dinner. And while I do enjoy making tortilla wraps with the kids, the vast majority of the time we will just pick up some wholewheat or corn tortillas from the shop (because who has the time?).

How to make cheesy, tasty, veg-packed green enchiladas in just 30 minutes. This Mexican dinner is super simple and delicious. It's also sugar free, with a gluten free and veggie option, and is a real crowd-pleaser.

Servings: 4 serves
Ingredients
  • a couple of tbsps olive or coconut oil
  • 2-3 courgettes (zucchini), finely diced
  • 1 large red onion or 2 medium ones, finely diced
  • 200 g (1 1/3 cups) frozen sweetcorn
  • a couple of handfuls of fresh baby spinach, optional
  • a couple of handfuls of cooked shredded meat (chicken and pork work really well here) or 1x 400g (14oz) tin black beans or cannellini beans
  • 1 x 300g (10.5oz) jar of low sugar/sugar free green salsa*
  • a couple of handfuls of grated hard cheese like Cheddar
  • 4 large wholegrain tortillas (or 8 mini ones – use corn or gluten free versions if needed)
  • 2-4 spring onions (scallions), finely sliced
  • handful of fresh coriander (cilantro), roughly chopped (swap for parsley or leave out if you're not a coriander fan)
  • to serve: sliced avocado or guacamole, sour cream, extra salsa (red or green), jalapeños, mixed salad leaves, or your favourite enchilada extras
Instructions
  1. Preheat oven to 200C/400F/gas 6. Gently fry the courgette and onion in the olive or coconut oil over medium heat until softened (about 5 mins). Add the frozen corn and cooked meat to heat through. Add the spinach, if using, 1/2 the jar of salsa and a handful of grated cheese and stir to combine, then divide between the tortilla wraps. Wrap up the tortillas and lay “seam-side” down in a large baking dish. Pour over the rest of the salsa and cheese, then bake for 20-25 minutes, until bubbling and tortillas are starting to brown at the corners. Serve topped with spring onions and coriander and alongside your chosen extras.

Hi Elizabeth, I personally make my own wraps most of the time by mixing 3 cups flour (wholemeal/plain/a mix) with 1 tsp each of sea salt and baking powder, 1/3 cup olive oil and 1 cup warm water. I mix to make a dough, divide into 8 balls and leave on a floured counter covered with a clean tea towel for about 15 mins, then I roll them out as thin as I can and dry fry in a hot pan or griddle until they get brown spots on both sides. They are soft, sugar free, and so much better than shop-bought! When I don’t have time, I buy the best I can, which is usually wholemeal wraps that have a tiny bit of sugar – I just opt for the lowest sugar and/or most recognisable ingredient option I can. 🙂
